Chicken Salad with Her Majesty's Hot Sauce

Ingredients

  • 2 pounds boneless skinless chicken thighs
  • ½ cup sliced raw almonds
  • 1 cup mayonnaise
  • 1 tablespoon Her Majesty’s Hot Sauce
  • ½ cup red grapes, quartered
  • ½ cup honey crisp apple, diced
  • 2 celery ribs, diced
  • 3 green onions (green and white parts), sliced
  • 2 tablespoon finely chopped parsley
  • 3 tablespoons fresh lemon juice
  • kosher salt and freshly ground black pepper, to taste

Directions

1. Preheat oven to 400 degrees. Arrange chicken thighs on a sheet pan and season with salt and pepper. Bake for 35 mins. 

2. While the chicken is cooking, cut all the fruits and vegetables and add them to a bowl. Add the almonds as well. 

3. Make the dressing: Combine mayo, hot sauce, lemon juice and stir well. 

4. Dice the cooked chicken and add to the bowl with fruits and vegetables.

5. Pour dressing over the top, mix well, and add salt and pepper to taste. 

Serve with crackers, make a sandwich, or eat over a bed of greens.
